We are working with hunters, fishermen, farms and organic producers for almost 16 years of private sales and now we are offering our products to the public. To be honest this is the best job ever – to see the people smile when they try our tasty food! There is no greater joy than to share food, abundance, and the stories of the food and where they came from.
As a sustainable and aware business we also use the antlers for education and other artistic purposes. We also have goods made from the hide, stay tuned for more of these.

Weekly Interview: The Hunter
Hawaii Venison: tell us about how you started to get involved in harvesting deer with the USDA?
Hunter: Well, first of all I’ve been in the farm business a long time and a hunter almost forever. I noticed how the population of Axis Deer blew up and we needed to do something.
Hawaii Venison: How did you get it going?
Uncle Des: Lots of hard work, lobbying, flying to Washington, convincing people that this was good for our ‘Aina and made sense to use the harvest, honestly mostly just a whole lot of work, never giving up, no sleep (laughing)!
Hawaii Venison: How did you start working USDA or how does it work?
Uncle Des: It was when we had the opportunity to do things right. We had to follow all these rules and we not used to that, normal we go harvest and clean in the field and go home to cook. Now we had to fly out the inspector.
Hawaii Venison: What kind of things did you have to do?
Uncle Des: We had big investment and a lot of risk to set up everything and have a HACCPP certified plant for processing our harvests. Every time we harvest we fly the inspector over from Oahu, they oversee the harvest, the post-mortem and processing procedures. Even if the weather doesn’t cooperate we cannot harvest and yet we invested in bringing the inspector over. It is a lot to do and expenses are high but it is worth it to do what is right.
Hawaii Venison: What do see in the future?
Uncle Des: Well everything is wide open. Our goal with the venison is to firstly manage the population in the right way, next is to use every part that we harvest, and lastly is to insure a great quality and healthy food source for the future.
